Following the traditional Emilian workmanship as Grandpa Giorgio did, true Parmesan,we work the meat of our pigs without adding the less noble parts. The mixture thus obtained with single cuts derived from the belly, allows to obtain a leaner salami. The salt added is less compared to the Venetian recipe: pepper grains are incorporated for giving fragrance without burdening the flavor.
